HISTORY

In the mid to late 70's, the Filipino community here in the US was but a fraction of what it is today. We were in search of a better life, but were nostalgic for the things that reminded us of home. Among the many differences between Philippine culture and US culture was the food. Back then, the supermarkets didn't have the "Asian Food" aisles and Asian grocery stores were few and far between. Despite this, we were able to make do.

     
 

display case Ed and Cecile emigrated from the Philippines around this time, in hopes of finding their American Dream. Little did they know it would start with a sweet Filipino brioche roll -- better known in the Philippines as Ensaymada.

Cecile had loved baking since she was young, always experimenting until it was just right. Moving here to the US did not hinder her experimenting. She often brought these native treats to various parties and gatherings. One item became a popular request -- the Ensaymada. Soon, friends would offer to purchase these precious commodities so they could enjoy them at home too. Paired with Ed's enterprising skills, the pair decided to try selling these tasty rolls to the local Asian grocery stores. After the initial taste test, these stores willingly began to purchase by the dozen.

As the demand continued to grow, opening a bakeshop seemed to be the next logical step. On March 2, 1985, they opened their shop in Bergenfield, NJ. Staffed with a handful of family members and close friends, they were left only with empty shelves and a fatigued crew.

Just as the Filipino community has continued to grow, Christine's Bake Shop has grown too. You can still find their products in various Asian grocery stores in the NY/NJ Metropolitan area. In addition to their Bergenfield shop, they a have branch in Jersey City, NJ and now a recently opened branch in Colonia, NJ. At all of these locations, you will find an ever-expanding variety of authentic Philippine delicacies baked fresh daily the traditional way.
